Crumpets… or Flapjacks?!

After a hard work out this morning (blading around the harbour, whooohooo!), it was time to head back and make some breakfast...

 

There were only two eggs in the fridge so that meant 2 poached eggs or 2 fried eggs OR um... TWENTY CRUMPETS!

 

I'm glad we decided on crumpets but more so that we only used ONE of those eggs else we would have ended up with FORTY crumpets between us...

 

As it was, we had MORE than enough crumpets...

 

Way too many crumpets, in fact...

 

As if anyone can ever have too many crumpets!

 

If you're keen on making 20 crumpets, here's how: sift 275 grams flour, 3 teaspoons baking powder, 1 tsp bicarbonate of soda, 25 g caster sugar, 3/4 tsp salt into a bowl. In a separate bowl whisk 450 ml milk, 2 tsps lemon juice & one egg before whisking in 65 grams of melted butter. Make a well in the dry ingredients and mix in the liquid ingredients. Whisk until smooth but don't overwork the batter!

 

Melt some butter on medium heat and ladel in your crumpets or mini-pancakes (allow space between them) - cook until a pale golden brown or until you see bubbles appear on the top

 

Turn over and cook the other side until golden brown...

 

Cook in batches (use a warming drawer if you have one)...

 

Drizzle honey or syrup over your crumpets and serve with tea. Hmmmmmm!
